This book was inspired by Dr. H.F. Robinson, Chancellor Emeritus of Western Carolina University at Cullowhee, North Carolina. Dr. Robinson has been interested in the old native varieties of corn and their uses for many years, and is actively working on the improvement of the Cherokee flour corn.
Recipes in this book have two things in common; they all use corn, that most important and ubiquitous of Indian food, in one form or another, and every recipe is genuinely Indian.
